These recipes are all easy to make (seriously as badly as I would love to be a top chef, I’m not that gifted) and depending on your schedule – can be made any night of the week!! As a bonus, I’ve also listed my 2 favorite Fall cocktails! You may remember one from my IG Stories I did last week – it broke the internet!

Easy Bake Breaded Chicken Breasts

Crock Pot Chicken Pot Pie.
Spiked Apple Cider
Few things are as warm and comforting on a chilly day as a steaming cup of hot apple cider. Adding a little liquor to the brew makes it even better (and a bit warmer as well).
This is a simple punch that adds rum and cinnamon to spice up and spike that cold weather favorite. Plus, there’s a little sparkle thanks to the tiny gold flakes found in Goldschlager. It’s a wonderful punch for autumn and winter parties and is sure to be a crowd pleaser.
The beauty of the hot gold apple cider is that it is easy to make. Simply pour everything into a pot on the stove, a slow cooker, or an insulated punch bowl and gently warm it up. It fills the house with a lovely, inviting aroma and allows guests to ladle drinks as they please.
Ingredients4 cups (1 quart) apple cider
1 1/2 cups (1/2-750ml bottle) dark rum
1 1/2 cups (1/2-750ml bottle) Goldschlager Cinnamon Schnapps
4 cinnamon sticks
6 whole allspice
10 whole cloves
1 orange (sliced)



Easy Bake Breaded Chicken Breasts
So when you ask my husband what his favorite meal I make is, without a doubt he will say this chicken. There really isn’t anything special to it but with this surprising ingredient – it makes the most delicious, tender chicken around. The method is easy – take raw chicken breast and slather is with…MAYO. You heard me right. I HATE mayo but in this recipe it makes all the difference. Once the chicken breast is slathered, dip into panko bread crumbs until completely covered. Place chicken in preheated oven at 350 degrees and cook for 25 minutes. Prior to taking the chicken out of the oven, heat about 1 tablespoon of oil in a fry pan. When the oil is ready, pan sear the baked chicken for about 2-3 minutes a side to give it an extra crisp. Pair with crispy brussel sprouts, or an arugla salad and serve.
Crockpot Chicken Pot Pie
This Chicken Pot Pie is AMAZING and is the easiest, tastiest pot pie you’ll make all year. With a few simple ingredients and a slow cooker, you’ve got yourself a meal even the pickiest eaters will love.
Ingredients:
1 large onion diced
▢1 large russet or sweet potato peeled and diced
▢2 skinless boneless chicken breasts diced
▢1 can cream of celery soup 10 ½ ounces
▢1 can cream of chicken soup 10 ½ ounces
▢1 cup low sodium chicken broth
▢1 tablespoon fresh parsley
▢½ teaspoon poultry seasoning
▢black pepper to taste
▢3 cups frozen mixed vegetables defrosted – I used green beans, carrots and peas and just poured as needed
▢8 baked biscuits homemade or refrigerated
Directions:
Throw the onion, potato and chicken into the crock pot. In a separate bowl – combine soups, broth, parsley and seasoning and mix together. Pour mixture into the crock pot and stir together. Cook on HIGH for 4 hours. Add defrosted veggies and cook on LOW for 1 hour. Prepare biscuits as directed and ENJOY.
